About the Event
A hands on four hour class with the students decorating a Christmas yule log with a modern twist together with baking the best mince pies using my tried and tested short crust pastry recipe. We will cover how to top the mince pies with lots of different flavour combinations. Step by step demonstrations at each stage from our experienced baker Sally Davis. You will then tackle mastering the various techniques yourself with guidance at each point. Students will take home the yule log and mince pies that they create during this workshop together with recipes. All materials and ingredients are included in the cost of the course. Please bring a box or container to transport your mince pies home and we will supply a board and box for the Yule log. Due to time restraints on this course we will provide you with a pre baked chocolate cake that will become the decorated Yule log.
Skills Acquired During This Workshop.
- Filling a round sponge cake and covering with buttercream.
- Giving the round cake a bark / log effect
- Making decorative sugar and marzipan decorations such as holly, ivy, toadstools and Robin bird.
- How to make shortcrust pastry.
- Variety of different toppings for mince pies and decorative finishes.
A Bit About Sally
My name is Sally Davis. For as long as I can remember I have loved to bake and decorate cakes so when I left school I decided to study patisserie and cake decorating at bakery college for three years. After finishing college I set up and ran a successful bakery and tea rooms with my family in Woodstock. Some years later I decided to branch out and set up The Cake Shop in the Covered Market Oxford with a view to concentrate on cake decorating. The business went from strength to strength and soon I opened a second branch in Banbury and moved to larger premises in Oxford. I am proud of my achievements at The Cake Shop and over the years made cakes for thousands of people with many of them coming back year after year. We even had a visit from HRH The Prince of Wales and Duchess of Cornwall. I am an accomplished baker and love to pass on my knowledge to students of all ages and abilities.
I have held many cake decorating workshops and evening classes over the years to teach both sugar craft skills and baking. I strongly believe that it is possible to coach all students and to give them the knowledge and tools to create great looking cakes and improve their artistic ability and confidence in cake decorating and baking.
In 2020 I sold The Cake Shop with the aim to concentrate on passing my skills and knowledge to anyone who loves to bake and create sugar works of art.
